Our current menus:
One of the most exciting developments in Caribbean dining rooms lately has been the fusion of the sophisticated sensibilities of experienced chefs with the vivid ingredients of the islands. A case in point is the Palm Court restaurant of Anguilla's Cinnamon Reef Hotel whose highly distinctive menu has been created incorporating these concepts.
Vernon Hughes, our head chef, is currently working on a new menu and will soon add dishes such as sauteed breast of chicken with soy-pineapple sauce over black-pepper fettuccine; a carrot and christophine (chayote squash) wonton; and house-smoked snapper with Scotch bonnet-infused oil (Scotch bonnet is an incendiary Caribbean chili) served with jicama-and-orange salad.
As a new cuisine is evolving in the Caribbean, chefs are coming along with new ideas and improving their presentation. Menus at the Palm Court are indicitive of this.
